The quest for chips

So far, I’ve found a Frito-Lay plant near Roanoke (high on my list of plants to tour if they give one, as Lay’s potato chips have long been my favorite chips), various smaller chip companies in the area, and, find of finds, a PDF that details the names and breeds of chipping potatoes.

Now all I need to do is find a produce shop that can order them, or that stocks them.

Oh, and then I need to find the fry basket I’ve been looking for for years: One that has a metal screen that will hold the chips under the oil. That’s how Utz does it. I knew I was right all along about that.

If this keeps up, I’m going to have to add a food category.

    See my comment of 10/5. BTW, there are lots of deep fryers which have bottom screens. The main advantage to the bottom screen is that the oil drains out quickly when you take the chips out of the oil. This avoids spot overcooking.

    Good for fried chicken, too.
